  2. Sugar: worldwide influence • Originated in Indonesia and New Guinea • Spread to India by traders and travelers. • Further spread west by Arab conquest and the Crusades, • Prices in London were equivalent to $100 per pound in 1319.

  3. The New World • 1493: Columbus brings sugar to the Caribbean • Sugar well-suited to tropical climate • Explosive growth in cultivation • Production accelerates the Transatlantic Slave Trade. • Export agriculture engrained into economy and makes way for TNCs in the future.

  4. Cutting the Grass: Not an Easy task • Machete injuries are most common. • Heat-related injuries. • Noxious gasses produced by refining. • Seasonal workers are particularly vulernable. • Widespread environmental effects.

  5. Sustainable Sugar • Bagasse is used as a biofuel and paper pulp. • Ethanol production. • Brazil is the world’s leader in ethanol production.

  6. Sugar Delicacies • Jaggery is solidified molasses consumed religiously in India. • Cahaca is an alcholic drink produced from sugarcane juice. • Rapadura is a staple food in Colombia. • RUM ANYONE?
