  2. PUPROSE OF EXPERIMENT To formulate an acceptable tuna patty using the following: Stuffer: Green lentils Binder: Chickpea flour

  3. LEGUMES • Legumes are part of the pea or bean family • Common legumes: Beans, peas, lentils, peanuts, and soybeans • Legume seeds have twice as much protein as grains • Good source of protein • High iron and low fat

  4. LENTILS • Disk shaped legume • Major source of carbohydrate, fiber, protein, and minerals • Low in fat • Very affordable (1Lb= $1.90) • Common types: brown, red and green • For our experiment we used green lentils

  5. MORE INFORMATION ABOUT LENTILS • One of the oldest cultivated legumes • 2/3 of lentil production in India • Common in vegetarian dishes • Common dishes: • Dal (Indian word for lentils) • Amti (lentil curry) Picture: Dal

  6. HOW TO PREPARE LENTILS Soak overnight and boil until cooked (25 minutes-30 minutes) Wash and soak for 10 minutes, and boil until cooked (45 minutes-1 hour) Cook without soaking for about 1 hour Uncooked lentils Cooked lentils

  7. NUTRITIONAL VALUES OF LENTILS 1 cup (198 grams) cooked, boiled, without salt

  8. CHICKPEA FLOUR • Chickpeas are ground into flour • Used internationally in pancakes, falafel and polenta • Used as a thickener and adds texture • Very affordable (1Lb= $1.40)

  14. PREPARATION PROCESS Weigh out all ingredients Mix tuna and lentil together, mash with a fork Add water, chickpea flour and spices Form into a patty Fry in ½ tbsp of vegetable oil Step 2 Step 3 Step 4 Step 5
