  2. Borne means carry. Foodborne means carried by food. Foodborne illness refers to illnesses that are transmitted to people by food. It is another term for food poisoning.

  3. Food poisoning can occur when… • bacteria, viruses or other pathogenic microbes (germs) contaminate food; • chemicalsaccidentally get into food; • when someone with a food alllergy eats a food they are allergic to.

  4. In this lesson, you will learnabout two types of foodborne illness: microbiological food poisoning and chemical food poisoning.

  5. Microbiological Food Poisoning

  6. Micro-organisms arereally smallliving things. Microbiological food poisoning is caused by: • Bacteria • Viruses • Fungi • Parasites

  7. Most food poisoning is caused by bacteria. Bacteria are micro-organisms.

  8. Symptoms of bacterial food poisoning include: Diarrhea, stomach cramps and vomiting. Next 

  9. How long it takes a person to get sick depends on the type of bacteria that made them sick. It also depends on how much bacteria – a little or a lot – was in the food the person ate.

  10. Here are two common kinds of bacterial food poisonings:

  11. Salmonella Symptoms occur 6 to 72hours after eating contaminated food.

  12. Meat and meat products such as roast beef, meat pies, sausage, ham, poultry (chicken), milk and eggs. Foods that can contain salmonella are: Especially cracked eggs.

  13. E.Coli 0157 Symptoms occur 3 to 10 days after eating contaminated food.

  14. Foods that can contain E.Coli are: Raw meats such as ground beef, poultry, pork. Unpasteurized milk. Contaminated water.

  15. People can also get food poisoning from viruses in food. Viruses are micro-organisms.

  16. Examples of viruses are: Hepatitis A Norwalk Virus Influenza

  17. Food poisoning can also be caused by fungi. Mold is one example. Mushrooms are another example. Can you see the resemblance?

  18. Fungi sometimes produce toxins (poisons) that cause food contamination.

  19. Finally, food poisoning can come from parasites. A parasite lives off its host. Worms in pets or people, for example.

  22. Food poisoning can also occur when…

  23. Chemicals accidentally get into food.

  24. Examples of chemicals that can accidentally get into food are: • Cleaners • Pest control sprays • Food additives (preservatives) • Degreasers (e.g., oven cleaner)

  25. So remember: Label pest control sprays and cleaners and store them awayfrom food. If space is limited, make sure these items are stored below food to prevent spillage into the food. Store chemicals in their original containers or in properly labelled containers. Never store chemicals in containers with food labels! People will mistakenly think the chemical is a food product! They may eat the chemical and get sick.
