  2. Offer vs. Serve (OVS) • Schools must offer the five food components specified in the lunch meal pattern each day. • Students must be allowed to decline two items at lunch; however, students must select at least ½ cup of either the fruit or the vegetable component. 7CFR 210.10(c)

  3. Definitions • Food component: One of the five food groups for reimbursable meals • Food item: A specific food offered within the five food components

  4. OVS: What has not Changed? • Required for senior high schools, but optional for lower grades • Optional for breakfast at all grade levels • All five components must be offered in the required portion sizes • Students may decline one or two components • Meal price does not change if student declines items

  5. OVS: New Requirements • Students required to select at least ½ cup of fruit or vegetable component • If student selects only 3 components and one is ½ cup of fruit or vegetable, the other 2 components must be full servings. • Example: Student in grades K-5 or 6-8 selects: • ½ cup vegetable (partial portion) • Must select full portion of other two components • Example: ½ cup fruit and 8 oz. milk (full portions) • Example: Student in grades 9-12 selects: • ½ cup vegetable (partial portion) • Must select full portion of other two components • Example: 1 cup fruit and 8 oz. milk (full portions)

OVS Activity 1: Sample Menu • Choose one entrée: • Pasta with meat sauce or • Teriyaki meatballs with rice and dinner roll • Choose two vegetables: • Green beans and • Corn • Choose one or two fruits: • Pears and/or • Cantaloupe • May also choose a milk: • Low-fat unflavored milk or • Fat-free chocolate milk

OVS Activity 1: Is it a Reimbursable Meal? • If student selects: • Scenario 1 • Teriyaki meatballs with rice and dinner roll • Fat-free chocolate milk • Scenario 2 • Pasta with meat sauce • Green beans • Low-fat unflavored milk • Scenario 3 • Pears • Cantaloupe • Low-fat unflavored milk • If student selects: • Scenario 4 • Rice • Green beans • Pears • Scenario 5 • Teriyaki meatballs with rice and dinner roll • Fat-free chocolate milk

OVS Activity 2: Sample Menu • Choose one entrée: • Sub sandwich or • Bean and cheese burrito with rice • Lettuce and tomato available for both entrees • Choose two vegetables: • Sliced fresh cucumbers and • Glazed carrots • Choose one or two fruits: • Applesauce and/or • Banana • May also choose a milk: • Low-fat unflavored milk or • Fat-free chocolate milk

OVS Activity 2: Is it a Reimbursable Meal? • If student selects: • Scenario 1 • Sub sandwich with lettuce and tomato • Low-fat unflavored milk • Scenario 2 • Sub sandwich with lettuce and tomato • Sliced fresh cucumbers • Applesauce • Scenario 3 • Bean and cheese burrito • Fat-free chocolate milk • If student selects: • Scenario 4 • Bean and cheese burrito • Glazed carrots • Banana • Scenario 5 • Sliced fresh cucumbers • Banana • Low-fat unflavored milk

OVS Activity 3: Sample Menu • Choose one entrée: • Hamburger or • Cheeseburger or • Grilled chicken sandwich • Lettuce and tomato available for all entrees • Choose two vegetables: • Sweet potato puffs and • Cole slaw • Choose one or two fruits: • Peach slices and/or • Fresh orange • May also choose a milk: • Low-fat unflavored milk or • Fat-free chocolate milk

OVS Activity 3: Is it a Reimbursable Meal? • If student selects: • Scenario 1 • Cheeseburger • Cole slaw • Fat-free chocolate milk • Scenario 2 • Hamburger patty (no bun) • Lettuce and tomato • Fresh orange • Scenario 3 • Grilled chicken patty (no bun) • Sweet potato puffs • Fat-free chocolate milk
