  3. Climate • Thailand: • 3 Seasons: • Cool (Nov-Feb), HOT (April-May), Rainy (June-Oct) • Monsoon: mid May-September • 75-92° • Indonesia: • coastal lowlands; larger islands have mountains • tropical; hot, humid; moderate in highlands

  4. Geographical Resources • “Asia”= Used by ancient Greeks to describe the civilizations east of their empire. • Agriculture • Rice • Mango, Papaya, and Pineapple. • Forestry & Fishing • China, Indonesia, and Malaysia make up ½ of the forested lands in Asia.

Dietary Guidelines • Southwest • Countries of India, Sir Lanka, Pakistan, Burma • Ingredients: hot peppers, black pepper, cloves, other strong spices, ghee (a butter oil), milk, chapati, and beans. Curry with a yogurt base • Northeast • Countries of China, Korea, Japan • Ingredients: emphasize fats, oils, and sauces vinegar and garlic. Dishes are relatively oily • Southeast • Countries of Thailand, Laos, Cambodia, Viet Nam, Indonesia, Malaysia, Singapore, Brunei • Ingredients: fish sauce, galangal, lemon grass, and tamarind, chilies. Curry with a coconut milk base • All use rice, ginger, and garlic. Southwest culture are also known for bread such as naan and Northeast their use of noodles.
