The Agricultural Processing and Product Development Center of Matanuska-Susitna Borough presents the results of a potato product development study conducted by Bausch Potato, Inc. in Whitehall, Montana. Utilizing Alaskan Pike variety potatoes, the Fresh Fries produced exhibited excellent fry test color results, achieving a golden hue rated between one to two on the USDA French fry color chart. This quality is highly acceptable to foodservice organizations and consumers alike, showcasing the effectiveness of proper conditioning and processing techniques.
