  1. Bhindi Masala Recipe There is no doubt that with time, things have extemporized and earlier, people are left with very fewer options in terms of variety and quality of the food. There were growing issues of bad health and people were falling sick after eating bad food at the Indian Railway Platforms given by the local vendors and sellers. After seeing this IRCTC E-Catering came into action and understanding the same, Food Train came up with a concept to serve their passengers high quality, hygienic, hot and fresh options in our favorite Indian, Chinese, Continental etc. food that could fall in their customer's budget. But Food Train did not stop at only food delivery in train and explored further by making recipes standardize and that could help our customer in making the most of their travel. Bhindi Masala is everyone’s favorite whether cooked at home or bought from some restaurant. Our specialized chef comes up with his special recipe of Bhindi Masala which we want to share with our respected customers who regularly order food in train. INGREDIENTS: 1 kg Fresh Bhindi 1 Cup Chopped Onions 1 Cup Chopped Tomatoes Ginger and Garlic Paste Basic Indian spices like cumin seeds, ground turmeric, cumin coriander, kasoorimethi, garam masala, amchur powder, along with salt as per taste and little sugar 1 Cup Yogurt How to prepare Bhindi masala gravy? To make bhindi masala, you will need to do some prep work for the lady finger. Wash them, and use a clean kitchen napkin to wipe them dry completely. Then cut the tip and crown, and shallow fry with little oil, until it shrinks dark green, it should be around 80 % cooked. Let’s talk about heart of the dish, the bhindi masala gravy itself. The masala is a basic Punjabi onion- tomato masala seasoned with spices like turmeric, red chili, cumin coriander, kasoorimethi, garam masala and amchur masala. A little bit of yogurt adds a nice touch of flavor of the masala. The fried bhindi is then added to this, and simmered in this semi-thick curry to absorb all the flavor and cook completely.
