  2. Culinary Arts II • Lab responsibilities • Baked Ziti / Garlic Bread Recipes • Demo (No Talking or devices; 5 point deduction on lab each time you’re told) • Work on Mise en place assignment • Due at the end of class on Monday • Test on Thursday

  3. Baked Ziti ½ Pound dry ziti pasta ½ onion, chopped fine ½ pound lean ground beef 4 oz. Mild Italian Sausage 1 tsp minced garlic 16oz Spaghetti sauce (1/4 cup on the top) 8 oz Ricotta cheese 1 T. grated Parmesan Cheese 1 egg 2 cups Mozzarella cheese, shredded (1/2 cup on the top)

  4. Baked Ziti Method • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes: drain • In a large skillet, sweat onion, Italian sausage and ground beef and garlic over medium heat. Till cooked • Add spaghetti sauce. • Combine ricotta and parmesan cheeses with 1 egg and mix • Combine all the ingredients and together • Top with 4 oz spaghetti sauce and ½ cup of mozzarella on top • In a 9x13 inch baking dish spray with nonstick coating • Cover with foil • Place in a Preheated 350 F. oven. • Bake for 15-20 minutes or until cheeses are melted

  5. Garlic Bread ½ cup butter, softened 1 T. Minced Garlic 1/8 cup grated Parmesan cheese ½ T Salt 1/2 tsp. Italian seasoning ¼ tsp. ground black pepper 1/8 tsp. ground paprika • In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with salt, Italian seasoning, pepper and paprika. Mix until smooth. • Place on French Bread • Bake in Pre-heated oven 350 degrees F. Till golden brown 7-10 minutes

  8. Corn Bread 1 ¼ cups milk 2 large eggs-lightly beaten 1/3 cup vegetable oil 3 T. butter –melted 1 ½ cups all-purpose flour 2/3 cup granulated sugar ½ cup Yellow cornmeal 1 T. baking powder 1 tsp. salt

Corn Bread Method • Preheat oven to 350 F. • Grease a half 2 inch pan • In the kitchen Aid mixing bowl add milk, beaten eggs, vegetable oil and butter and mix. • Combine Flour, sugar, corn meal, baking powder and salt in medium bowl. • Add the flour, sugar corn meal, baking powder and salt to the egg, milk, oil and butter mixture • Mix till smooth • Bake for 20-25 minutes till golden brown and toothpick comes out clean

Chili Beans 1 pound ground beef 1 onion, small dice 1 green bell pepper, small dice 3 cloves garlic, minced 2 tablespoons tomato paste 28 ounce can whole tomatoes with their juice, broken up 1 tablespoon ground cumin 1 teaspoon dried oregano 1 teaspoon salt 1/4 teaspoon fresh-ground black pepper 1 1/3 cups drained and rinsed canned pinto or kidney beans

  11. Chili Bean Method • In a large saucepan, add the ground beef and cook , stirring, until the meat is no longer pink, about 5 minutes; • Add the onion, bell pepper, and garlic and cook, stirring, until the vegetables start to soften, about 10 minutes. • Stir in the tomato paste and cook for 2-3 minutes • Stir in the tomatoes, cumin, oregano, salt, black pepper and beans bring to a simmer until the vegetables are tender and the chili thickened, about 5 minutes.
