  2. Cheese Examples There are hundreds of different cheeses made around the world. All of them are made using milk usually from cows, goats or sheep (ewes). Vegan cheese can be made with Soya Milk.

  3. Production • Pasteurised milk is used • Bacteria is added – lactose – lactic acid • Heated to 30c • Rennet added to separate the milk • Curd and Whey form • Curd cut – whey drained away • Heated to 37 c whilst stirred • Curd salted (2% salt) and pressed • Put into moulds and left to ripen

  4. Cheese is milk in a solid form Nutritionally..... Cheese is approximately 1/3rd each of Protein Fat Water It contains Calcium from the milk. Salt is usually added What is the function of these nutrients in the body?

  5. Cheese Production The cheese made depends upon the milk used and the bacteria that are added to it. It also depends on the methods of production, pressing and how acidic the cheese is. The main types are:- Hard Cheese Lightly pressed cheese Blue-veined cheese Curd Cheese Processed Cheese Cream Cheese

  6. Cheese Recipe Ideas • If you are asked to make a cheese based recipe, cheese should be the main ingredient not just added on top e.g. Pizza. • The following recipes are all based on cheese. • They are in order of difficulty i.e. The one showing the least skill level is first.
