  1. Vancouver: Sushi Capital of Canada "Irasshaimase!" This greeting, which generally translates to "come on in," is heard upon entering any sushi restaurant in Vancouver. Vancouver is one of the first North American cities to introduce sushi to Western palates. It has been known as the "sushi capital of North America" due to its enormous options of the best Japanese restaurants Vancouver. Visitors would be hard-pressed to go more than a few blocks in any direction without passing a sushi restaurant because they are about as prevalent as coffee shops in Vancouver. The city is an actual hot spot for raw fish, catering to both newbie and expert sushi eaters. According to the reports, there were over 600 sushi restaurants in Metro Vancouver alone.
