A Rapidly Developing Field • 1995 FAO/WHO Expert Consultation: “Application of Risk Analysis to Food Standards Issues.” “It has not yet been determined whether a quantitative risk assessment approach is possible and appropriate for characterization of risk associated with foodborne bacterial pathogens”

  4. QRMA: Historical Perspective • Prior to 1995: Microbial food safety concerns considered too complex for formal quantitative risk assessment • 1994 - 1996: First “research” attempts to conduct microbial risk assessments published • 1998: First “formal” assessment conducted by a U.S. regulatory agency published

QMRA: United States • Microbial risk assessments largely commissioned and conducted by regulatory agencies for developing new regulations • Salmonella Enteritidis: Egg and Egg Products • Listeria monocytogenes: Ready-to-eat foods • Vibrio parahaemolyticus: Oysters • Enterohemorrhagic Esherichia coli: Ground beef • Bovine spongiform encephalopathy • Campylobacter: Fluoroquinoline-resistance
