FY08 Checklist Meat Operations Changes from FY07 Checklist can be found in Public Folders/all public folders/DeCA East/Operations Business Area/IG Checklists with directives Print documents and become familiar with changes Ensure all personnel are informed of changes Stay IG compliant Cross management preparedness IG Readiness Patrons, Workforce, and Stakeholders working together to create “Raving Fans”

IG Readiness • Most Missed Questions: • #6 40-92 Self Inspections Deli/Bakery/Seafood/Sushi/Hot Food Operation • # 8 Salads/puddings/luncheon meat sticks/cheese dated immediately after opening and sold within proper time period. • #5 40-89 Self Inspections Meat Operations • #9 All chilled and applicable water food products have correct sell-by date • #7 Are unsold meat and waterfood products handled properly after they reach their sell-by date Patrons, Workforce, and Stakeholders working together to create “Raving Fans”
