Welcome to the 2014 event! This guide outlines the room layout and the sample table settings. Guests will enjoy a well-curated menu featuring a salad ("Lady Gala Apple Salad"), an appetizer ("Nelly Frittata"), and the main entrée ("Trombone Shorty Ribs with Bruce String Beans and Wiz Kauliflaur"). Note that the entrée will remain on the table until guests leave, and dessert will be presented buffet-style. Additionally, this document provides detailed service steps for Gold Plate Service. Don’t hesitate to ask any supervisors or managers if you have questions.

So, What Courses Will I Serve? • #1: Salad- “Lady Gala Apple Salad” • #2: Appetizer- “Nelly Frittata” • #3: Entrée- “Trombone Shorty Ribs ft. Bruce String Beans and Wiz Kauliflaur” • PLEASE NOTE: Entrée will not be cleared until after guests leave, and dessert will be set up as buffet style
**Gold Plate Service** • Step One: Serving • Step Two: Clearing
Enter From Satellite Kitchen • Head Server Leads clockwise around table, stopping at “Plate A” • Head Server will nod • Plate in your left hand will be lowered to the left • Step to the right while switching the other plate from right to lefthand • Lower left again to your second guest • Follow Head Server to exit • ***When no plates are in hand, walk with hand behind your back please Step One (Serving)
Step Two (Clearing) • Everyone goes to the same 2 guests that they have been serving to • BUT: It’s a little different!! • Pick up the plate with your right hand • Step to the left as you switch the plate to your left hand • Pick up the second guests plate with your right hand • Follow head server to exit
