  2. Green Plantain Chips • Vegetable oil • 1 large, green plantain (about 1 lb.) • Salt (optional) Fill a deep fryer or Dutch oven with vegetable oil. Heat oil to 375 degrees. Remove skin from plantain, cut off the fibrous strings and slice the plantain into paper thin rounds. Deep fry slices until golden brown on both sides, about 3 to 4 minutes. Drain on paper towels. Sprinkle with salt and serve chips warm or at room temperature.

  3. Coconut Chips • 1 dry coconut • Salt Crack the coconut and drain the milk. Remove the meat and cut into very thin slices. Place the slices on a baking sheet, sprinkle with salt and bake in a slow oven (stirring frequently) for about 20 minutes. Serve hot.

  4. Marinate grouper fillets in beer for one hour. Dry the fish and roll in seasoned flour. Shake off excess. Fry quickly in hot oil, turning once. Allow approximately 10 minutes cooking time. Drain on paper towels and serve with tarter sauce and lemon slices.
