  2. Combi-Oven Overview • Combination of convection oven and steam • Steams, bakes, grills, blanches, poaches, roasts, and dry fries (some models do this simultaneously)

  3. Advantages • Adjustable humidity levels • Reduces shrinkage • Improved color and nutritional value • Cost savings • Consistent results

  4. DISADVANTAGES • Higher initial cost than a standard convection oven • Higher maintenance costs • Lag time in conversion from convection to steam

  5. PSA and Combi-Oven • Needed for steaming vegetables • Will cut down on Sous Vide packaging use • No access to ventilation (need the Combi-Oven hood)
