Pellagra is a nutritional deficiency disorder caused by a lack of niacin (Vitamin B3), often linked to diets heavily reliant on corn. Symptoms include atrophic glossitis, characterized by a smooth tongue due to loss of papillae, and gingivitis, often caused by poor oral hygiene but sometimes associated with pellagra. The condition can also affect fertility. Goldberger demonstrated in 1926 that a balanced diet or small amounts of baker's yeast could prevent pellagra. Key food sources of niacin include meat, fish, dairy, and fresh vegetables.
