  2. The most ancient civilization in the island is dated back to the IV millennium B.C. After that the NURAGIC CIVILIZATION started (1700 B.C. II century B.C.)

  3. Nowadays the economy in the island is mainly based on • Farming • Fishing • Tourism

Tradition and Cuisine • Sardinian towns and cities, especially those along the coast, have a rich tradition of fish and sea food while inland areas are known for game-hunting, like for example wild boar-hunting, and farm produce. • Over the centuries the mixing of these traditions has evolved into a unique gastronomic experience.

  6. Regions and main Towns in the North of Sardinia • Gallura (Olbia, Tempio) • Anglona (Castelsardo) • Monte Acuto (Ozieri) • Nurra and Sassarese (Sassari, Porto Torres, Usini, Tissi, Alghero, Stintino) • Goceano (Bono)

  7. Sardinian Cuisine • In the north of Sardinia, in Olbia, Stintino, Castelsardo, Alghero, Bosa, Porto Torres you can taste the best fish dishes in the island. • In Sassari, Usini, Tissi, Ozieri, Bono you can try delicious dishes based on vegetables and meat (pork, lamb, beef)

  8. Sardinian Cuisine: let’s go more deeply… • The cuisine of the inland areas reflects the farming and sheep-breeding traditions. • Cattle, sheep, goats and pigs which feed on Mediterranean shrubs give this region an abundant source of fresh meats.

  9. Roasting and Spit-roasting • Both spit-roasting and roasting in wood-burning ovens are still the most common ways of cooking meat. Boiled meat and stews with potatoes, tomatoes or artichokes and thistles are also popular.

  10. Fishing • There is a large fishing industry: from lobster to squid, from prawns to mussels and clams and sea-urchins, from tuna to fish of all kinds

  11. Food and Wine • Large sized fish can be cooked in white wine. The best results are obtained by using "Vermentino di Gallura DOCG", which is a white, slightly aromatic wine.

From Gallura to Alghero • Anglona is known for its special tomatoes and peppers while the coastal area of Castelsardo is known for the excellent fish-soup. • In Porto Torres, a very important maritime centre since the Roman age, and Stintino, the cuisine is mostly based on sea food. The preparation of shellfish, octopus and fish cooked in a pan with potatoes is very popular LOOK! THIS DELICIOUS OCTOPUS DISH IS MADE BY VALENTINA’S GRANDMA FROM STINTINO! ENJOY!

The Area of Sassari BELIEVE IT OR NOT • The traditional cuisine from Sassari is famous for its recipes of baked aubergines, of fava beans, of grilled young donkey and horse meat, of lamb legs, of lamb entrails roasted or stewed with peas, and of snails. • Snails are delicious and are served in several ways; in spicy tomato sauce, cooked in olive oil, garlic and parsley, cooked in a pan and roasted. • A traditional dish is also “Slugs”, called “Monzette” in the local language. They are roasted, barbecued or cooked in a pan with olive oil, bread crumbs, parsley and garlic.

  15. Alghero • The sea food in Alghero is well accompanied and complemented by the white wines from along the Alghero coast, especially "Torbato", a dry white wine from one of the most famous wine-maker: “Sella & Mosca”.

  16. Extra Virgin Olive Oil • The area of Alghero is also rich in olive trees. The most famous oil-producer is in the estate of “San Giuliano”

The Area of Monteacuto Ozieri • Going southwards from Alghero, there are two regions, Logudoro and Meilogu, which are famous for their pastas, meats, cheeses and cakes. • There is a special bread called "spianata" and famous sweets called "sospiri” (delicious small balls of almond dough stuffed with almonds and a sugary citrus flavour) from Ozieri.

  19. Cheese • The pastures especially in Logudoro and Nurra, and the numerous and modern dairies produce a wide range of cheese of various sizes, kinds and taste, from fresh "pecorino" to mature cheese which is eaten sliced or grated, the most famous of which is the "pecorino romano".
