The balsamic vinegar dressing, which has been regarded as one of the best vinegar dressings for many years, continues to be a popular dressing used by many chefs to add some zest to the salad or dinner to counteract the already flavourless food. The simplicity is what makes it a favourite among home cooks and professionals alike. These dressings can be divided into two distinct quality categories: those made using commercial vinegar, which takes shortcuts to reach a similar result, and those made with the traditional method used in several Italian areas. Both varieties start by cooking white grapes until they produce a very concentrated grape juice. The grape concentrate is then kept in a wooden barrel for a longer amount of time to allow it to mature and ferment in the woods where it was kept. During the ageing process, the wood adds additional flavour and mixture to the balsamic vinegar, and while the distillate rests, it ferments and develops a richer flavour. The size of fermentation is what distinguishes commercial balsamic vinegar dressing from traditional balsamic vinegar dressing. Although alternative methods are used to speed up the process in the barrel and on quite a few occasions the vinegar is consumed sooner than the minimum of 12 years, the genuine balsamic dressing refers to the one that is fermented for any minimum of 12 years.
