Glutenfree Mocha Shortbread Cookies These Glutenfree Mocha Shortbread Cookies were so good, I made them with all-purpose flour, whole-wheat flour and then decided to go the gluten-free route with my trusted buckwheat ,mixed with some amaranth flour. Amaranth and jaggery add a new level of complexity in taste, very deep and earthy. This is complimented very well by the mocha flavours of chocolate and coffee. A dash of cinnamon softens everything down as does the butter along with honey, making these absolutely irresistible.
Lavender Buckwheat Jam Scones The Lavender Buckwheat Jam Scones were lightly sweetened, delicately flavoured , wonderfully tender and buttery. Just the way they should be. All that jam oozing out, crumbly dough, simply added to the rustic charm. We are looking at comforting homey easy baking here rather than polished perfection.The coconut oil and coconut cream should be well chilled. While the quality of scones was not compromised at all, I would recommend this step anyhow.

As long as I’ve done a five-minute prep the night before, they are a breeze to make in the morning. One container with dry ingredients, one with wet.
