  2. Why Should You Care?!? • At your tables, discuss the importance of food science and how the study of food impacts you lives. • Be ready to summarize your conversation to the rest of the class.

  3. What is Food Science? • Food science is the study of the nature of food, the causes of deterioration, the principles underlying food processing, and the improvement of foods for consumers • It began to evolve when technology moved food preparation from the home to the factory

  4. What is Food Science? • It focuses on what happens to foods before you eat them • Also address nutrition, or what happens to foods after you eat them

  5. Early Food Discoveries • How did people obtain food 100’s of years ago? • Civilizations formed where water, game, and land were abundant • Food, preparation techniques, and preservation methods were discovered through trial and error OR by accident • Earliest forms of food processing include: drying, salting, smoking, and cooking over an open flame

  6. Industrial Revolution • What happened during the industrial revolution? • How would this affect food?

  7. Industrial Revolution • Scientific advances brought changes in the economy and food production • Scientists discovered chemical’s relationship to life and began to understand bacteria

  8. Industrial Revolution • Machinery for farming increased food supply • Convenience items developed for military • Consumers initially avoided these items

  9. Government Regulations • Early regulations were formed due to adulteration of food • Ex: ground pepper (gravel), vinegar (sulfuric acid), sugar (sand)

  10. Government Regulations • USDA (US Department of Agriculture) developed to oversee food production and agricultural research • Now the USDA • Oversees meat, poultry, and processed egg products • Inspects processing plants • Develops dietary guidelines • Regulates organic foods

  11. Government Regulations • FDA (Food and Drug Administration) • Create food safety and wholesomeness standards • Food labeling guidelines • Approve food additives

  12. Most Important Milestone • Individually, share with your group what milestone you believe was most influential/beneficial to our country • AS A TABLE, choose ONE milestone you can agree on as the most important milestone. Be ready to defend your answer.

  13. Contributions of Food Scientists:Expanded Food Supply • Improve grain production to combat hunger • Develop new production methods • Hydroponic crops are grown with their roots suspended in liquid nutrient solutions • Biotechnology is used to lower production costs and increase crop yields

  14. Contributions of Food Scientists:New Food Products • Meet demands for inexpensive, tasty, nutritious, convenience foods • Develop foods for special needs such as armed forces, sports, and heath conditions
