  2. What is Collagen?What You Need to Know • Collagen is the most common protein in the human body. • They serve as threads of cable that hold everything together in the body such as muscle and bone. • Collagen also works in protecting our body by keeping our skin elastic and durable.

  3. The Collagen Triple Helix • The chart on the left shows the components of the protein. • Collagen takes the shape of a triple helix; three chains of amino acids tied together.

  4. Hydroxyproline & Vitamin C • Hydroxyproline, one of the amino acids, is necessary to complete a collagen protein. • Vitamin C is needed to make more hydroxyproline. • Without Vitamin C, we get scurvy, which is due to the lack of collagen present to repair the damage. Hydroxyproline Vitamin C

  5. Collagen on the Grocery Shelf • Collagen can be used for cooking. • When collagen is cooked, or heated up, the three amino acid chains separate. • The untangled chains then absorb the surrounding water which creates a gelatin substance.
