  3. WHAT ARE ROAST PROFILES? A roast profile is a map of how coffee beans are roasted - every moment from when heat is applied to when coffee leaves the roaster. Roast profiles take into account how hot the coffee gets, how long it is exposed to heat and the amount of temperature change over time. How coffee is roasted influences its flavor, body, acidity, and most importantly aroma.

  4. HOW FLORAL AROMAS ARE FORMED? Floral aromas in coffee come from natural compounds in the bean, mainly volatile organic compounds (VOCs) like linalool and geraniol. These are often present in higher amounts incoffee beans from Ecuador, especially those grown at high elevations under specific shade and soil conditions. However, these floral compounds are fragile. If the beans are roasted too hot or too long, the compounds break down and disappear. A light, carefully controlled roast helps preserve them.
