  3. Pommery Brut Royal Non-Vintage  • from Champagne, France • winemaker's notes:This fine champagne is a blend of 40 carefully selected crus from the Champagne region. It is made up of three grape varieties: Pinot Noir, Pinot Meunier, and about one-third Chardonnay. This subtle blend is then aged in the Pommery cellars for about three years in order to develop its full aroma. Fresh and vivacious, with a supple, fruity finish. The first notes of vanilla, almond and hazelnut are followed by nuances of colourful sun-soaked Summer fruits – apricots, yellow peaches, nectarines, poached pears. Gradually this generous fruitiness is joined by a soft spiciness of cinnamon, gingerbread and freshly-ground coffee. • Deep and structured, the Grand Vintage 2003 is fleshly, ample and smooth. This unctuous sensuality – reminiscent of leather and cashmere – segues into a warm finale of slightly acid licorice and candied grapefruit. It is still so young, with just a hint of toast to show some maturity. The finish is shockingly fresh. (12/ 2011) • 93 points Robert Parker's Wine Advocate The 1999 Brut Blanc de Blancs is another deep, multi-dimensional wine from Billecart-Salmon. Here the fruit shows slightly more burnished tones, along with greater textural richness and weight, all while retaining surprising verve and cut. Roasted hazelnuts, smoke and pastry crust add complexity on the suave finish. The vintage Blanc de Blancs is made from parcels in Avize, Chouilly and Mesnil... Poached pear and gingerbread scents are complemented by notes of buttered toast, honey, jasmine and grain. Broad and fleshy on entry, then tighter in the mid-palate, offering sappy pear and spice flavors and sneaky licorice and mineral nuances. Clings impressively on the finish, with the floral and toast qualities repeating. Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes.   10. Critical Acclaim • "The 2002 Dom Perignon is at first intensely floral, with perfumed jasmine that dominates the bouquet. With time in the glass the wine gains richness as the flavors turn decidedly riper and almost tropical. Ripe apricots, passion fruit and peaches emerge from this flashy, opulent Dom Perignon. The wine's volume makes it approachable today, but readers in search of more complexity will want to cellar this for at least a few years to allow for some of the baby fat to drop off. Geoffroy describes the vintage as very ripe and adds that some of the Chardonnay showed the ill-effects of the hot growing season in it the somewhat burned, dehydrated fruit that came in that year. This bottle was disgorged in July, 2009.   14. Moet & Chandon "Imperial" Brut Rosé Champagne • 91 points Stephen Tanzer's International Wine Cellar (roughly 45% pinot noir, 35% pinot meunier and 20% chardonnay): Bright orange-pink. Spicy cherry, red berries, blood orange and five-spice powder on the perfumed nose. Fleshy but dry, boasting excellent energy to its bitter cherry, redcurrant and floral pastille flavors. Finishes smooth and fleshy, with very good breadth and cling. The turnaround over the last few years at this house, now under the guidance of chef de cave Benoit Gouez, has been remarkable.  (12/ 2013) • 91 points Wine Spectator A smoky, fresh rosé, lightly chalky in texture, showing delicate flavors of crème de cassis, gumdrop, grilled plum and ground spice.
