  3. One of the things I love about my job, aside from cooking different dishes, is discovering what dishes you like the most! I always find it interesting to see what our customers order. Because of this, I have decided to dedicate my latest post to two of the most popular signature dishes on the menu at Mott 32. I frequently find myself cooking these meals for customers to enjoy. I think you can probably guess what one of them is, the Peking Duck. The other popular main dish is Iberico Pork Char Siu. These main courses seem to be firm favourites! Chef Fung

  4. Peking Duck It is natural that I begin with our Apple Wood Roasted Peking Duck, given that is the other thing we are known for, aside from our dim sum menu. I really think preparation is the key with this dish. We use apple wood and smoke the duck in our oven, following this we dry the duck for 48 days in our custom designed drying fridge that gives it a crispy exterior yet delicious and sufficient meat. Please note that you will need to order this dish in advance. We only have a limited amount of ducks per day, so if you want to try the Peking duck when you make your reservation inform the receptionist. We will need at least 24 hours notice to provide you with this dish.

  5. Iberico Pork Char Siu Aside from the duck, Iberico Pork Char Siu is another popular dish amongst guests when visiting our Chinese restaurant in Central. This dish is a crowd pleaser, with the crispy caramelized top and the sweet char siu. Both components work well together. The sticky and sweet yellow mountain honey glaze seems to be a hit with a lot of our customers. Nonetheless, another reason why I personally think this dish works well is because of the contrasting textures. You have the fluffy, soft and fragrant inside of the pork teamed with the light, crispy and sweet coating. When creating dishes I always think the texture is as equally as important as the taste. It adds to the overall experience.

  6. A lot of our customers think we sell the top dim sum Hong Kong. But, Iberico Pork Char Siu and Peking Duck are also two extremely popular dishes with our diners. But if these two dishes don’t tickle your fancy there are plenty of others to choose from, such as Braised Whole Japanese Sea Cucumber in Oyster Sauce, Pan Fried South Australian Scallops and Minced Prawns, Traditional 12 Hour Slow Cooked Sticky Pork Belly, Signature South Australian Lobster ‘Ma Po’ Tofu, Fried Glutinous Rice with Preserved Sausage and Dried Shrimp and much more!
