  1. Luchi Indian Special Occasion Recipe Every Indian cuisine offers something delicious and the Bengali cuisine does nothing less. It is high in both flavors and taste and has easy to cook recipes. One of the most famous Bengali dishes is Luchi, often served with Aloo Dum. It is a deep-fried, puffed white bread made of all-purpose flour (Pure Maida). Apart from the Bengali cuisine, it is popular in the Assamese, Maithili, and Oriya cuisines too. Traditionally, Luchi was fried in ghee, which gave it a very unique flavor. But these days they are also fried in vegetable oil. Whether as a festive treat or just as something special for your weekend meals, this puffed Luchi recipe is worth a try. Instructions • Preparing Dough for Luchi • First, add the flour, ghee and salt to a bowl or a large plate (tray). • Add 1 or 2 tablespoons of water and mix everything with your hands or a spatula. • Next, add about 1/2 cup of water and start kneading the flour. • Add water as required and knead very well. You need to ensure that the dough is soft and smooth. • Cover the dough with a moist kitchen napkin and let it rest for at least 30 minutes, at room temperature.

  4. Rolling and Frying Luchi • Use the dough to make lemon-sized balls. Cover these with a moist napkin. • Apply some oil on the balls and roll each one of them into a circle of about 3-4 inches. • Heat some oil for deep frying in a kadhai or pan. The oil has to become hot. • Next, drop a small piece of the dough in the oil and check if it comes up steadily from the bottom. If it does, it means the oil is ready for the luchi to be fried. • Carefully drop the prepared dough circle into the hot oil. You will see the luchi beginning to puff up. • Nudge the luchi lightly with a spoon to help it complete puffing up. • Once one side becomes creamish and the oil stops sizzling, turn it over and fry the other side. • Remove the luchi and use kitchen towels to soak the extra oil.  • Serve hot with aloordum, chhola dal or any Bengali vegetable or lentil curry
