  2. ICE CREAM IN A CUP • Ice Cream Scoops are to be left in the container of ice cream between uses in the freezer. • Each flavor needs there own scoop. ROOT BEER FLOAT • Take a 20 ounce foam cup • Put in 2-3 scoops of ice cream into the foam cup. • Do not pack the ice cream into the cup • Ice cream cups can be made up ahead of time • Do not pour root beer into cup! The order taker hands them a cup of ice cream and the whole bottle/can of root beer. • Long handled spoons and straws are on the condiment table. 2014 BC WI 4-H Food Stand Prep - Ice Cream

  4. Malt/Shake Machines: • You must be 16 years of age to run the shake machines. • Tight fitting latex gloves must be worn when using the machines. • Do not stick anything in the malt cup when blade is running. . 2014 BC WI 4-H Food Stand - Set up

  5. ICE CREAM SHAKE • Put in 12 ounces (about 3 scoops) of ice cream into the metal cup. Do not pack the ice cream. The shake machine will not mix. • Blend until smooth, do not use any utensils in the cup while the machine is running. • Add about a 1/2 cup of milk depending how soft the ice cream is.   6. Do NOT allow scoops to sit in water. • This is a food hazard as bacteria can quickly grow. Many people say that they have seen ice cream shops do this but it should only be done when the scoops can be in running water.   7. Tips on making a Shake: Avoid hitting the edges of cup on the blade. To engage blade cup needs to rest under lip on the button. If ice cream seems not to be mixing add more milk or spin cup to un-lodge ice cream chunks. 2014 BC WI 4-H Food Stand - Set up

  8. Take a 20 ounce foam cup. • Scrape the metal cup and put the shake into a 20 ounce foam cup.
