Combine the yeast, warm water (a little bit from the cup) and salt,in a large bowl and mix them all. A few minutes later you have to add the rest of the water, the cup of oil and the flour and stir until it comes together into a dough: it should be firm, but soft. Leave it in a warm place about half an hour.
Put a teaspoon of apricot or peach jam with ground nuts in a corner and fold each side tightly. Heat the oil in a large pan or deep-fat fryer to 160°C and cook the pies for about 3 minutes on each side, until golden. Pass them through vanilla powder. Eat immediately, while they're still warm or later, when they become cold.
