  2. It is said that food follows the seasons and in Greece the seasons are followed by fasting and religious holidays. • Fasting is considered by many people a way to show their faith and discipline. It is also an opportunity for detoxification.

  3. However, the meaning of fasting was introduced by religion in order to serve practical purposes. • It was a great opportunity for domestic animals to reproduce, to grow up and not to be killed in the period of pregnancy and breastfeeding. That way the food chain was maintained.

  4. It was an intention to “force” households make economy (olive oil was an expensive commodity) • It gave the poor the chance to eat meat, dairy products and olive oil (the church collected these products from the rich, during fasting periods, and gave them to the poor)

  5. The various rules of the Greek Orthodox Church have affected people’s eating habits. • Even non-religious people abstain from meat, dairy products and eggs during Lenten days that precede religious holidays like Christmas or Easter.

  6. This is the reason why many dishes (stuffed vegetables or pies) are cooked in two ways: • with meat or cheese, the ‘festive’ • without meat or cheese on the days of fasting

  7. Dishes of the second category above are called ‘ladera’ (cooked only with olive oil) • They contain pulses, vegetables and fruit, a diet based on the healthy Mediterranean way of cooking.

  8. Religious holidays evolved from ancient celebrations. Easter, the most important celebration in Greece, seems to have its roots in the pagan agricultural spring festivals of antiquity. • Typical Easter foods are grilled lamp, salads with wild vegetables, red eggs, tzatziki, “tsoureki” (kind of brioche), fresh cheese with honey.
