  2. Food additives are not major ingredients in food, but only as additional ingredients • Food additives usage aims to enhance food quality in terms of appearance, durability, and nutrition in food. • Some additives are also added for economics purposes

  3. Additives based on their function are grouped into several types such as : • Sweeteners • Colourings • Flavourings • preservatives

  4. Sweeteners Sweeteners used in foods are classified into two kinds: • Artificial Sweeteners • Natural Sweeteners

  5. Artificial Sweeteners • Artificial Sweeteners are additives that are made from chemical synthesis with help of modern technology

  6. Examples of Artificial Sweeteners • Saccharin Its sweetenes level is 300 times sweeter than sugar • Aspartame Its sweetenes level is 200 times sweeter than sugar • Acesulfame-K Its sweetenes level is 200 times sweeter than sugar • Sorbitol Commonly used for bread and jam

  7. Natural Sweeteners • Natural Sweeteners are derived from natural ingredients • These types of sweeteners include glucose, fructose, and sucrose • Example of Natural Sweeteners : • Sugar ( Sugar cane) • Palm sugar • honey

Colourings Artificial colourings: • From the chemical reactions produced by the factory • Examples of food colourings are: Alchanat, carmoisine (red) Caramel (brown) Violet GB (purple) Annato, sunset yellow (yellow) Leaf green (green ) • Example of artificial colourings in textile industry: Methanyl yellow (yellow), rhodamine D (red)

Natural colourings • Natural colourings are dyes extracted from natural materials • Example of natural colourings : • Carotenoid: its presents in fruits such as tomatoes, carrots, and oranges which are the resource of red or yellow colour • Anthocyanin : is a source of orange, red, and blue colour. Its presents in flowers, and fruits such as in grapes and strawberries • Curcumin: the source of yellow colour. Is found in turmeric (kunyit)

  10. Flavourings • Artificial flavourings: • Most artificial flavourings products in the market use chemicals called monosodium glutamat (MSG) • Natural flavourings: • These natural ingredients include onion,garlic, ginger (jahe), pepper (lada)

  11. Preservatives • Artificial preservatives : • That are produced from the chemical synthesis • Example : acetic acid (cuka), benzoate, sodium nitrite, sorbite, propionate, sulfite, vitamin C • Natural Preservatives : • That are obtained directly from nature or through the extraction of natural materials • Example : table salt, sugar
