Minimal Inhibitory Concentrations of IsoStab against Lactobacillus species and Ethanol-Production strains of Saccharomyces cerevisiae It is clear that the growth of all three strains of Lactobacillus are inhibited by 6ppm of IsoStab. At the recommended concentration of hop acids to be used during ethanol production from corn mash (30ppm) the Lactobacillus species chosen are inhibited from 75-91%.

  7. The data presented shows that up to 200 ppm of IsoStab has virtually no effect on the growth of the six yeast strains. At 300ppm to 400 ppm, a slight reduction in growth can be observed and at 500ppm, at least 2 strains show a significant reduction in growth. The Effects of High Concentrations of IsoStab and Yeast

  13. Conclusion: The results from this trial are very positive and indicate that IsoStab is an effective product to inhibit lactic acid and acetic acid formation without affecting yeast. In-fact, yeast during the treatment was healthier as indicated by higher viability numbers through out the fermentation train.
