  2. Vitamins: • Organic substances that are vital to metabolic activity • Vitamins – A, D, K, B6, B12, C • Animals do not produce, thus need to get from food

  3. Coenzyme: • Vitamins are coenzymes, or parts of enzymes, that assist a specific enzyme to catalyze a reaction

  4. Fat-Soluble Vitamins: • Vitamins that have the ability to be stored in fat deposits in the body • A, D, E, K

  5. Water-Soluble Vitamins: • Help catalyze cellular reactions such as cellular respiration • Not stored in body and quickly removed through urine and feces • B vitamins & C

  6. Vitamin A: • Function: maintenance of bones, teeth, and skin • Found In: yellow fruits and vegetables, green leafy, fortified milk • Deficiency: Dry skin, blindness • Excess: Hair loss, liver, and bone damage

  7. Vitamin D: • Function: bone growth and calcium absorption • Found In:Formed in skin, egg yolks, fortified milk • Deficiency: Bone deformation • Excess: Retarded growth, kidney damage

  8. Vitamin K: • Function: Blood clotting • Found In: Green leafy vegetables • Deficiency: Severe Bleeding • Excess: anemia, liver damage, jaundice

  9. Vitamin B6: • Function: Amino acid metabolism and energy production • Found: Spinach, potato, meat • Deficiency: Skin, muscle, and nerve damage • Excess: Impaired coordination

  10. Vitamin C: • Function: Immune System • Found In: Citrus fruits, berries, cantaloupe • Deficiency: Scurvy, poor wound healing • Excess: Digestive issues

  11. Minerals: • Naturally occurring inorganic substances • Not produced by humans, therefore need to be ingested • Water-soluble so excess amounts are excreted through urine and feces

  12. Calcium: • Function: Bone and teeth formation • Found: Dairy products and dark green leafy vegetables • Deficiency: Stunted growth and osteoporosis • Excess: Kidney stones

  13. Iron: • Function: formation of hemoglobin • Found In: red meat, whole grains, nuts • Deficiency: anemia • Excess: liver damage

  14. Potassium: • Function: muscle and mineral function, protein synthesis • Found In: Diet provides ample amounts (bananas) • Deficiency: Muscular weakness • Excess: Muscular weakness
