The feisty character, the racy acidity and vibrant flavours you would find in a Chablis are mirrored in the eyes of the portrait, so it seemed an obvious pairing. Our Chablis Le Classique Pascal Bouchard is my hot tip, as the subtle citrus fruit flavours combine with a flinty, minerally finish on the palate” Recommendation: “The bright yellow and earthy greens remind me of a young Chardonnay. The Alamos Torrontes from Argentina fits this bill perfectly with its delicate grape and petal perfume, hints of jasmine and honeysuckle, lashings of tropical fruit and yet a crisp, dry finish. ” Recommendation: “ For me this is full of vibrancy - the colours are fresh and alive and full of movement. This long revered grape once made the most sought after wines in the world – long lasting, dry or sweet and full of interest but poor winemaking techniques signalled it's fall from grace. A fight back has happened recently though, with quality being placed back at the heart of production, and people have responded accordingly. Interest has surged and Riesling' battle back to the top is well under way. Made from rarely found varieties, this is an uncaramelised cognac, giving it an incredible lightness and delicacy.” Recommendation: “ A peaceful, calming piece when first you look at it, putting me in mind of mist covered lands. Any organic wine would seem to fit into this but the colours used here suggest a lightness and simplicity, so I am going for Offida Pecorino Le Merlettaie Ciu Ciu from Abruzzo, Italy. Made with minimal intervention and certified organic, it allows the best expression of everything the fruit has to offer.” Recommendation: “ Here I see nature asserting its dominance over the urbane.
