  2. Salad greens are a leaf that we eat. Salad greens are also called lettuce. Bolting is when a plant sends up a flower stalk and blooms. To bolt means to escape or run away. While plants do not “run away” physically, their growth may run away rapidly, and this is what the phrase means in the gardening world. Farmers do not want lettuce to bolt because it will lose its good taste. Lettuce is picked before this bolting process begins.

  3. There are hundreds of varieties of salad greens. The darker the leaf the more nutrients.
