  3. Disadvantages of traditional drying (1) • Food can be contaminated by dust, animals or people • Food can be spoiled by unforeseen rain • Nutrients can be destroyed • Dangerous free radicals can appear due to UV in sunshine

  4. Disadvantages of traditional drying (2) • Too high temperature can be achieved • Devastating moulding can occur, especially while drying fish • The process is very slow in cloudy and foggy weather
