Chilling Forks and Plates • Line a stainless steel pan with a clean linen napkin. • Place clean forks or plates (upside down) on top of the clean linen napkin. • Place a second clean linen napkin over the clean forks or plates. • Place the pan carefully in the refrigerator away from food areas.
Use a clean, wet, cloth to clean service cart components in this order: • Shelves • Pedestals • Legs • wheels
Wash hands (both sides) for at least 20 seconds before preparing food.
