  2. Step 1 • Place 2 C of flour and ¼ tsp salt in a mound on the counter- make a well

  3. In a bowl… • Add 1 T milk, 1 tsp olive oil and 3 eggs

  4. Mix well

  5. Add egg mixture to well • Do this a little at a time

  6. Stir mixture from the edge of the egg • Mix until all flour is mixed in

  7. Form the dough into a ball

  8. Knead until smooth and elastic • About 5 minutes

  9. Wrap in plastic wrap and let it sit about 10 minutes • While it is sitting, • Set up pasta maker • Clean up kitchen

  10. Run pasta through the pasta maker • Set it to 7 • Fold in half • Run through again then change the thickness

  11. Let pasta sit • About 5 minutes • Get bin and lightly flour bottom

  12. Run past through the cutter • Separate the pasta and place it in the floured bin

  13. What do we do today? • Measure flour and salt- place in a labeled bowl • Make sure you have 1 dozen eggs in fridge • Put meatballs in bowl, wrap and label • Check out the pasta maker- clean kitchen and make sure bin is clean
