  4. You will need: Ingredients: 125g Plain Flour,1 Tsp. Baking Powder,100g Granulated Sugar,4 Tsps. Brown Sugar,2 Medium Sized Eggs,1 Tsp. Ground Cinnamon,180g Grated Carrot,140ml Vegetable Oil,2 Large Handfuls Sultanas. Next…

  5. Method… • Take flour, baking powder, sugar and cinnamon and sieve into a mixing bowl. Discard any loose chunks of sugar which remain at the bottom of the sieve… Next…

  6. Method… • Add eggs and vegetable oil and stir until mixture resembles a runny paste… Next…

  7. Method… • Add grated carrot and sultanas and stir well… Next…

  8. Method… • Spoon mixture into a loaf tin, there is no need to grease beforehand… Next…

  9. Method… • Cover the loaf tin with kitchen foil and tuck in the edges… Next…

  10. Method… • Place in an oven which has been preheated to 180*… Next…

  11. Method… • After 60 minutes return to check the cake isn't burning. Pull back foil and using either a table knife or skewer stab the cake. If gloop remains on the poking device, the cake is not yet cooked on the inside yet… Next…

  12. Method… • I personally would suggest that this cake be left for roughly 90 minutes in the oven, the foil will prevent the top of the loaf from burning… Next…

  13. Method… • At 90 minutes, remove from oven and place on cooling tray. Do not attempt to remove the cake from the loaf tin until it has cooled thoroughly as the cake may break. The cake will remain very soft until it has cooled slightly… Next…

  14. Method… • To remove from loaf tin, I would suggest using a spatula to separate the edge of the cake from the inside of the loaf tin before flipping the tin upside down. The cake should then slide out at ease with minimal crumbling… Next…

  15. Method… • Once cooled, cut into slices using a bread knife and serve with a hot mug of herbal tea. This cake goes very well with a tea of a slightly more bitter quality such as Cranberry and Elderberry. Next…
