Denmark People from Denmark called Dane or Danish Borders Germany Greenland is a province Salmon, cod, and herring are staples Eel common Very green terrain – raise cattle and hogs Carrots, potatoes, cabbage, and kale common –served glazed or creamed Smorrebrod – open faced sandwich, usually whole wheat or rye bread with other toppings

  4. Sweden • People known as Swedish • Best known dish – smorgasbord – buffet • Simple or complex • Commonly a mix of flavors • Potatoes used as side dishes • Fruits are used many ways (soups, dried treats, or accompany pancakes)

Norway • People known as Norwegian • Small family farms • Fish is a major element of the national diet • Herring burgers or pickled • Lutefisk (dried cod soaked in lye) • Cabbage rolls, boneless birds • Lefse – potato flat bread • Cream and cheese used in dishes • Krumkake – Christmas cookie • Berries have intense flavor due to cold climate
