Topics • A commodity supply chain • Poultry products, pork, dairy, grain, or sugar • Food or Beverage Manufacturing in the US • Food Retailing • Food Service Providers • Third party logistics in Food Supply Chain • Temperature Controlled Supply Chain • Factors influencing supply and demand for organic or local foods • Food Certification Schemes (Sustainable, Fair Trade, etc.

  3. Sector Research (15-18 pages) • Historic Overview of the segment • Changes to size, structure, and supply chain over 50 years • Characteristics of the current segment • Major players, their size, function, sales, geographic distribution and business structure • Supported with tables and figures • Government policies that significantly impact the way the sector competes • Significant current and potential trends that will affect the sector • Current risk issues for the sector.

  4. Exemplar Company (3-5 pages) • Chose an interesting company that has differentiated their product from the typical commodity side of the chain (value-added attributes) • Write a mini-case about the company covering their overall characteristics and strategy • How do they do things differently from the traditional players.

  5. Good Examples • Two of our case readings provide a good template for this project • Friona Industries (Beef) • The Cooperative Group (both a retail environment and a chocolate product)

  6. Presentation (June 2) • The Group presentation should be 15 minutes. Your group should • be as creative and engaging as possible, • address mainstream business model, players, trends, etc. and show interesting supporting data, • Cover your mini-case company and how they are different from the norm • You are encouraged to incorporate slides, props, costumes, skits, humor, and interactive activities. • The class will grade your presentation according to coverage of all the above points.
