  2. What are Buckwheat Groats? • Triangular shaped seed • Hulled • Can be roasted to establish a nutty flavor • Gluten free alternative to other grains • Nutrient composition for 1 cup cooked buckwheat groats: • Carbohydrates 11% • Protein 11% • Fat 2% • Fiber 18%

Benefits of Buckwheat Groats: • Gluten free alternative to grains • Provides minerals to the diet naturally: • Magnesium • Potassium • Phosphorous • Calcium • Contains dietary fiber • Provides some protein to diet • Possibility of aiding in : • Reducing cholesterol levels • Lowering blood glucose levels

  4. Binders • Potato Starch: thickener, gluten free • Potato Flour: thickener, gluten free flour alternative • Guar Gum: thickener, stabilizer, water binding property, and helps ‘emulsify’

  5. Final Patty Process • Cooked buckwheat groats • Combine with other ingredients • Formed 45 gram patties • Heated on nonstick cook top till browned to desired level Original Recipe Final Patty
