  1. Sodium Chloride AnalysisIn French Fries By: Chris Rideout, Gregory Thebeau, Makenzie Hill, Michael Park

  2. What is the chemical formula, chemical structure, molar mass and the CAS Registry number of the analyte you will be working with? • Sodium Chloride – NaCl • Molar Mass = 58.44g/mol^-1 • CAS Registry number= 7647-14-5

  3. Health Benefits Unlike what everyone thinks, sodium chloride (salt) is actually needed for the body to function properly; every cell in the body is dependant on the presence of sodium.

  4. Health Risks As with nearly everything, too much salt may cause problems, such as hypertension or high blood pressure, and can even cause cancer due to high acidity.

  5. What is the normal or acceptable amount of Sodium Chloride? • For adult males and females the recommended amount of sodium chloride is 3.8 grams each day. This will provide you with the proper amount of sodium to function properly.

  6. Equipment needed: • Sodium Ion Selective Electrode • Sodium Ion Selective Electrode Fill solution • Pipette for fill solution • Computer Interface • Lab-ware made of plastic • Blender

  7. How it works • To use the sodium ion selective electrode you first must crush the french fries with the sodium on them into a liter of diluted water and put the ion selective electrode into the water after removing the cap. Then you keep it in the solution for one to five minutes

  8. Other chemicals needed • The other chemicals needed are the solution of 0.53% ammonium chloride and 99.47% water

  9. Restaurants • McDonalds- Small fry-170mg Sodium-71g • KFC- Individual fry- 770mg Sodium-113g • A&W- Small fry- 460mg Sodium-85g • Wendy’s- Small fry- 380mg Sodium- 108g • Burger King- Small fry- 500mg Sodium- Unidentified

  10. Procedure • Buy small fries from different restaurants • Blend small fries • Add one litre of water • Adjust concentration as needed • Separate water from blended fries • Insert sodium ion selective electrode • Wait for fluxuation to end • Take stable reading • Repeat several times • Do for other samples

  11. Skills required • Skill to use the sodium ion selective electrode.
