Pengertian Gliserol. Gliserol ialah suatu trihidroksi alkohol yang terdiri atas 3 atom karbon. Jadi tiap atom karbon mempunyai gugus –OH. Satu molekul gliserol dapat mengikat satu, dua, tiga molekul asam lemak dalam bentuk ester, yang disebut monogliserida, digliserida dan trigliserida.
