MALNUTRITION EXPLAINED • Modern agricultural systems and food refining has caused the nutrient content of food to drop by up to 76% over the past 50 years • The result is ‘hidden hunger’ (micro nutrient deficiencies) - when, even with a full stomach, a person hasn’t absorbed enough vitamins or minerals • Many man-made vitamins cannot properly be absorbed by the body, or are destroyed by cooking • Nutrients need to be supplied in a ‘food-state’ form to be effectively absorbed by the body

NUTRIENT REPLETENESS • Nutrient repleteness refers to our body’s optimal nutritional condition that will result from a well-balanced, nutrient-rich diversified diet • Nutrient Repleteness is the basis of good health, well-being, and sustainable development • The body will perform optimally when it is‘nutrient replete’as a result of it biologically absorbing the necessary quantities of nutrients on a daily basis

NUTRITION EXPLAINED • For good quality of life, the body requires essential nutrients on a daily basis • When a person gets ill, is under stress or is doing physical exercise, the body’s nutritional processes, including the immune system, require extra nutrients to address the challenges • This is particularly so for the elderly who generally eat smaller quantities of food that may lack nutrients

BENEFITS OF GOOD NUTRITION • Helps to keep weight stable • Helps prevent muscle loss and maintain strength, thereby enabling the person to remain active • Helps replace nutrients that are lost due to stress, disease or due to poor quality of food • Improves wound healing • Faster recovery from infections • Person is able to deal better with medication and treatment • Foods / nutrients help drugs work more effectively

  6. e’Pap TECHNOLOGY • Industrial chemist Basil Kransdorff and his wife Rose, set out to combat‘hidden hunger’ • They developed e'Pap’ which, in one food portion, delivers 28 nutrients – many of the important nutrients found in a well balanced diet  • Currently, e'Pap is used in many programs, from sport, HIV/TB support to crèche and school feeding and company wellness programs

  7. e’Pap FOR THE ELDERLY • Ailments including general health issues, bedsores, brittle bones and chronic diseases can be better managed with improved nutrition • Sandringham Gardens (SG) has been using e’Pap in their frail care section to help patients who are unable to get adequate nutrition because of eating difficulties • Because of the noticeable benefits, it is worthwhile incorporating e’Pap into meals at SG • Will enable residents to better get their daily vitamin and mineral quota and will have an enormous positive impact on residents’ health, energy and well being resulting in an improved quality of life

  8. CHALLENGES Serving a non-traditional meal such as e’Pap in porridge form may: • Not be a popular option amongst residents • Generate boredom by not encouraging menu diversity • Not allow SG residents to play an active role in choosing what they like to eat

  9. e’Pap RECIPE BOOK • Residents at SG will be invited to submit traditional Jewish recipes based on what they enjoy and what they are eating at mealtimes • These recipes will be modified to integrate fixed quantities of fortified e’Pap flour • Recipes will be tested by the residents to select the best options • The nutrients can then be incorporated into the SG food chain through its catering facility • Could benefit many people, including the residents at the Selwyn Segal, Arcadia and the TLC • The best recipes will form an‘e’ Pap Jewish Recipe Book’ available to the larger community
